Mood Boosting Waffles

  • 150g wholemeal flour
  • 1 tsp baking powder
  • 2 tbsp brown sugar
  • 2 tbsp milled flaxseed
  • 240g Koko Original
  • 15g raw cocoa powder
  • (Extra brown sugar and flaxseed to sprinkle on after)

Matcha Yoghurt


  • 100g water
  • 50g raspberry jam
  • 30g brown sugar
  • 80g blueberries
  • 80g blackberries
  • 80g raspberries
  • 20g goji berries
  • 1 star anise


  • 10g mint
  • 10g raw cocoa nibs
  • 2 brazil nuts
  • Sprinkle of brown sugar
  • Sprinkle of flaxseed


  1. Mix all the yoghurt ingredients together and set aside in the fridge for 30 minutes or until it thickens.
  2. Place water, jam, brown sugar and goji berries in a pan and bring to the boil for 1 minute then pour onto the blueberries, blackberries and raspberries. Set to one side to cool.
  3. Pre-heat waffle iron.
  4. Place all waffle mix in a food processor and blend for 3 minutes then place in oiled waffle iron for 5 minutes or until crispy.
  5. Plate up the waffles, and sprinkle with sugar and flaxseed. Pour over fruit mixture, spoon on the matcha yoghurt and garnish with the chopped brazil nuts, mint and cocoa nibs.
