Pri’s Puddings – BREAKFAST YOGHURT COOKIE CUPS

Ingredients

  • COOKIE CUP
  • 50g oat flour
  • 38g coconut flour
  • 20ml agave syrup
  • 35g melted coconut oil
  • Pinch of salt ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • FILLING
  • 5 tbsp Koko Plain Yogurt Alternative
  • 1-2 tbsp agave syrup
  • Chopped strawberries and bananas
  • Pinch of cinnamon
  • Pinch of saffron

Method

  1. Melt coconut oil
  2. Mix all cookie cup ingredients until dough forms
  3. Roll into 1.5cm balls and press into moulds / mini muffin cases
  4. Freeze whilst you make the filling
  5. For the filling, Mix the yoghurt and agave syrup
  6. Decorate with toppings of your choice
