Rainbow Smoothie

Ingredients

  • A carton of Koko Original Milk
  • 2 bananas
  • A handful of strawberries and raspberries for your red layer (fresh or frozen)
  • Half a carrot, sliced for your orange layer
  • A handful of pineapple chunks for your yellow layer (fresh or tinned)
  • A handful of spinach for your green layer
  • A handful of blueberries for your blue layer (fresh or frozen)
  • A handful of blackberries for your indigo layer (fresh or frozen)
  • Ice

Method

  1. Start with your indigo layer as that goes in the glass first and work your way up the rainbow. Blend 1/3 of a banana with your fruit/veg and 2 tbsp coconut milk. Add ice if you’re not using frozen fruit/veg so the layers stay separate. Add more coconut milk or ice if needed to get the right consistency.
  2. Carefully spoon the layer into the glasses and place the glasses in the freezer while you blend the next layer.
  3. Rinse the blender between layers to avoid mixing colours.
  4. Makes at least 2 drinks depending on glass size.
