Rainbow Smoothie
Ingredients
- A carton of Koko Original Milk
- 2 bananas
- A handful of strawberries and raspberries for your red layer (fresh or frozen)
- Half a carrot, sliced for your orange layer
- A handful of pineapple chunks for your yellow layer (fresh or tinned)
- A handful of spinach for your green layer
- A handful of blueberries for your blue layer (fresh or frozen)
- A handful of blackberries for your indigo layer (fresh or frozen)
- Ice

Method
- Start with your indigo layer as that goes in the glass first and work your way up the rainbow. Blend 1/3 of a banana with your fruit/veg and 2 tbsp coconut milk. Add ice if you’re not using frozen fruit/veg so the layers stay separate. Add more coconut milk or ice if needed to get the right consistency.
- Carefully spoon the layer into the glasses and place the glasses in the freezer while you blend the next layer.
- Rinse the blender between layers to avoid mixing colours.
- Makes at least 2 drinks depending on glass size.
