Simple Salad
Ingredients
- 5 large leaves of romaine lettuce, shredded
- 8-10 cherry tomatoes, halved
- 3 tbsp tinned sweetcorn, drained
- 2 spring onions, finely sliced
- 1/3 cucumber, deserted and cubed
- 40g Koko Cheddar Cheese Alternative, cubed
- Dressing of choice (I used shop bought vegan Caesar)
- 2x tortilla wraps (optional)

Method
- Combine all ingredients except cheese and dressing in a bowl and toss to combine
- Transfer to plate and scatter with cheese cubes
- Drizzle with dressing as desired
- Enjoy! Eaten as is or in wraps for a more filling meal
